Meal Plan Monday: Budget Cut

Here's our very budget-minded meal plan for the week. We had a budget re-evaluation last week and decided to drastically cut the food budget to help take us further through our employment dry-spell. Our meal planning is going to have to get a little more creative to make sure we stay within the new parameters. I was planning to research some more on cheap-but-yummy meals, but the busy weekend didn't allow for it. I'm going to go with one of our simple, inexpensive go-to's, the 3 ingredient chicken caesar salad and a few others. Here's my effort for this week:

Looks like another perfect menu to me. I like breakfast food for dinner especially during the summer. I like making omelet with fresh dill from the garden and brie cheese. Enjoy! xoox

I too am on a strict budget for EVERYTHING these days. I haven't blogged about it yet but I'm using e-mealz.com {recommended by Dave Ramsey and how I heard about it} for CHEAP meal ideas and my favorite CHEAP meal right now is "Impossible Cheeseburger Pie."

We've been doing a lot of caesar salads as well. All of the sudden two out of three kiddos will eat it and actually enjoy. I love breakfast for dinner, thanks for the reminder.

we've been on this trend as well... this past winter was spaghetti/tacos/pizza more than I want to admit! Pizza is a great one because if you make the crust yourself (super easy) it is like 40 cents worth of supplies (my nerdy husband figured it out) and then you have a little bit extra $ for yummy toppings. I now make my own sauce too (blogged about it sometime this past winter) that is really good and super cheap/easy too! You'll get in your groove soon...

and don't even get me started on coupons... I am addicted to those little 75 cents of savings! Ha!

I love how you plan your menus and are so careful to budget......you have inspired me to go back to menu planning like I used to and be more careful about eating out so much:)

I need to definitely! Meal plan better... and on the cheap! One of my budget friendly faborites is Shephard's Pie, 1lb ground beef 1 tbs Worsterchire Sauce, 1 small bag of frozen mixed veggie, mashed potatoes, shredded cheddar cheese.

crock pot meals are good. you can get cheaper grades of meat because the cooking in the crock pot tenderizes it in a way. also i have a cookbook that gives you a recipe for a dish and then tells you how to use the leftovers from that dish for a whole different meal.

I have a fabulous book you can come and get until you are sick of it, called rice and beans! a zillion cheap recipes, all yummy!

I need to get on a budget. Thanks for posting these each week and inspiring us. I must get better about it.

I think frittata's are the most inexpensive and well rounded meal I make--a veggie, cheese and eggs.

i love your board, very cute. budget friendly meals...what about a pot roast (i guess that might be more wintry) but it seem like large soups and chili go a long way for little money.

I always like paninis. My fave is basil, mozzarella and tomato. Super easy and almost like a kicked up grilled cheese. :)

It's really a better winter meal, but baked potatoes (or twice-baked) topped with some chili. Canned chili or homemade. Chili is actually pretty cheap to make if you get the meat on sale.
