Meal Plan Monday

Planning this week was hard for me. Not sure why that is, but this is what I came with:

Monday
:
pasta with pesto
grilled chicken
salad
(roll over from last week)

Tuesday:
chicken strips
green beans

Wednesday:
fajitas

Thursday:
leftovers

Friday:
pizza
salad

Saturday/Sunday:
chili
(I know it's not quite chili season, but the cooler weather has thrown a craving on me.)

I'd love to hear any plans/ideas you have. I'm in need of some inspiration.

some of my favourites include caramlised onion frittata, salmon or tuna patties, or roast vegetable and pine nut salad with a balsamic dressing, yum! Hope that gives you a push in an 'inspiring' direction :)

I am just TERRIBLE with meal planning lately... I blame it on the CSA, we never know what produce we are going to get and then it needs to be eaten all right away, so we are just going with the flow here. Lot's of meals of all vegetables just to eat it all!

I get uninspired too some weeks but those sound like wonderful ideas! I am loving the idea of making Asian pan fried veggie dumplings with black vinegar, garlic chives and baby greens tonight. I have been craving butternut squash soup lately...I think it is the autumn thing. xo

that pasta looks good! I was very uncreative this week too, if you look at mine, you'll see why! haha I'm not using one recipe because I really wanted to use up stuff in the pantry! sometimes easy weeks menu-wise are nice!

My go to dish is always some sort of pasta. Lately, it's puttanesca. I'm also big on just throwing some fish and veg on the grill. Just toss in olive oil with S&P first. Super easy.

Oh my gosh, it is SO chili season! At least in our family. Every year during football season, my mom cooks chili on the stove all day long. Then we cozy up on the couch and watch The Giants and eat chili for lunch and dinner!!

My older kids & I have been reading a few different cookbooks, and have fallen in love with a whole bunch of soup recipes. We've decided to have a soup day once a week, to give some of these gems a try. :o)

i was recently craving chili too! pasta w/pesto and chicken sounds yummy! we're having steak and salad tonight but i might have to steal you pesto meal for later this week.

I make a pesto pasta that we love. It is so good, easy and reheats well. It's the lemon basil pesto pasta from Williams Sonoma. I highly recommend it!
