Meal Plan Monday


How was your week? I hope it was a good one for everyone! We had a wonderful time hanging out with our families, eating some seriously good food, and then getting away from the city for a bit. I'm feeling quite thankful for it all, and so fortunate to have some leftovers after it's all said and done. And, no, I'm not sick of T-Giving fare just yet! Here's the plan:

Monday:
tortilla soup (carry over from last week)

Tuesday:
honey baked ham sandwiches
w/ my mom's spicy honey mustard
(will have to get and share the recipe for this one!)
side of fruit

Wednesday:
turkey/dressing/sweet potatoes one.last.time.

Thursday:
grilled chicken
broccoli

Friday:
out

Saturday:
breakfast casserole (as specifically requested by my daughter)

Sunday:
salad with the leftover grilled chicken

My husband said to me recently, "I can't believe some people won't eat leftovers." Oh, how I love him! Makes things so much simpler for me. How do you feel about leftovers?

I adore Thanksgiving leftovers, other than that I'm not much of a l.o. fan. We don't have any left - we ate - all. weekend. long.

My husband also love leftovers: when we got married, he exclaimed that he never wanted to eat another sandwich, and that I should cook in bigger proportions so that he could have them to eat at work. lol

What a guy ;)

we are definitely trying to eat lighter this week since last weeks was nothing short of gluttony. we bought a spagetti squash i'm pretty excited about!

Sounds yummy! I'm still eating my cranberry sauce...it's now turned into cranberry jam or better yet, cranberry spread when mixed with some softened cream cheese. I love holiday leftovers.

Any chance you'd share your tortilla soup recipe? I really want to make this at home!

we had tortilla soup at our casa this week. sooo yummy even Abby loves it. She's my girl who loves spicy.
