It's going to be a l-o-n-g week, with the hubby missing most meals. That means that I'll be making quick, easy meals that require little prep time and even less clean-up efforts. I'm not even assigning days. We're just going to roll with it. Not the most inspiring of meal plans, but it's for the sake of sanity. You understand, don't you?

coconut chicken tenders and green beans
(from Bell and Evans... so yummy, with no antibiotics or hormones!)
mac and cheese and peas
spaghetti
(I'm being realistic here)
I better get a weekend out after this heckuva week! What are your go-to-easy-out-of-the-freezer/pantry/frig meals?

Sounds like plenty of kid friendly meals! Sometimes the most important part is just to get the kids to eat! (at least in my house!). Have a great week!
Of course I understand! I save lots of super easy options for when hubby is away. Keep it simple and roll with it... Have a good week! Now I gotta go finish my own menu...
I don't have any but I'm anxious to hear what everyone else says! I'm always on the lookout for easy kind of menus! As for your quesadillas... do you have a good recipe for those? Never made them and would love to one of these nights!
All sounds great! Not the healthiest but my back up dinner is a frozen pizza with a salad that has lots of veggies (to offset the sausage!).
