Meal Plan & an Explanation


I know I said I was going to edit, but I haven't done the most bang up job following through. I done over-committed myself. I know some go-getter types might have to laugh at my schedule, but I just don't handle a full dance card all that efficiently. Why this mumbo-jumbo? I suppose it's my attempt at explaining away my sporadic posting as of late. Hang with me: I'll get it all figured out soon. (Hopefully). This week's menu plan will be much like this recent one as the hubby is going to be unaccounted for more than a couple nights this week. I'm hanging in there. You too?

Yes, pretty much, just hanging in there . Do you find it hard to come up with 7 dinners? I can do 5 or 6 OK, but 6 and 7 can be tough. I don't know why. I found a new recipe for Thai pork lettuce wraps that is really simple, so I'm trying that this week. I'm also going to make a favorite Southwest salad since gardening and warm weather have put me in the mood for salads. Hang in there. We all do through dips and dives.

I know what you mean. Baseball practice two nights a week is really throwing me off.

I am hanging in there, too! Love your fun and sweet blog. I am like you--I do not operate well with a full dance card! But, remember that it's important to know your limits and that is much better than over-committing and becoming overwhelmed. Then nobody's happy! Have a great week!

Life is funny that way, isn't it? Sometimes we're looking for "things" to do and other times, we can hardly seem to escape the "things."
