Meal Planning

Okay, so the meal planning is still hit or miss over here. I don't know what I'm doing, but seriously, when I sit down to plan I'm just drawing a blank: So unmotivated. Because of that, I've been going to some easy standbys and then trying some new recipes. The ole "smorgasbord board" that we've adopted as our new fast, fun meal is making another appearance this week. Just lay some meat, cheese, crackers and fruit on the table and let every one go at it. My son thinks the whole of it is his portion. He probably could have managed it all, but we made him share.

Not sure what else we'll eat this week, but I promise, I'll feed the family. Maybe I'm trying to get everyone is the practice for when we (hopefully) won't have a functioning kithen in the (hopefully) near future.

I do have a few recommendations on a couple of new recipes. Last week I made Chicken Tamale casserole, and we decided it was a keeper. I didn't make it quite as light as the recipe suggests and next time will need to add less red pepper due to my daughter's sensitive palette. And per that same sweet daughter's request, I made "fried" cheese sticks another night, paired with chicken nuggets and green beans. She's been lamenting that she can't buy her lunch on the day they have mozzarella sticks because she doesn't like any of the sides served with it. I (being the awesome super-mom that I am. HA! So not the case. Ever.) decided to whip some up for her (bc I just happened to have been emailed an easy recipe for them and had all the ingredients on hand). They were so very yummy and I scored some brownie points! Definitely give them a try.

Any suggestions to get me out of my menu-planning-slump? I hope I'm not dragging you down with me!

I am going to try the tamale casserole tomorrow night and then some roast beef and gravy sandwiches on Wed. I will send you the recipe if it is good.

I totally understand. I've been in a slump too. Maybe it's the change in seasons. I'm not quite ready for the cold-weather recipes I think. But I always feel good when we try something new, especially when the kids approve. I like getting inspiration from others, such as yourself! But remember, if you take those 20 minutes to plan it out, the week is sooooo much easier. I always regret it when I don't have a plan going into the week.

I'm already down...and I don't like it. I'll sit to plan and I come up blank. I need to make a list of recipes that I like and recipes that I want to try and pick from there. How sweet that you whipped up some goodies for your favorite girl. I"m sure that made her day.

well i'm certain you don't want to hear from pathetic me!! in fact if you read my last post you might not ever want to be my friend again!
but seriously...this week i'm rocking the food plan.
taco soup & pasta salad with baked potatoes for who ever didn't want pasta ( soup & pasta were left overs from a party i had to prepare for)
crock pot tenderloin.
grilled chx, fried ocra & mashed potatoes. yes, the ones in the black thingy.

but i love your idea of a little antipasta for dinner. my girls would think that was ever so chic!

Love the board idea! It is a fun way to provide food that the kids will actually eat!

I have several posts under my food category that may help with your meal planning motivation - or at least jumpstart the process! =)

Thanks for the great tip!

I'm struggling too. Usually I'm full of ideas and rearing to go with family meal planning . But lately I've run out of steam. Still pressing ahead though and thanks to my hubby came up with a great weeknight meal idea - grill cheese sandwich bar. He made them the other night with fried eggs and provolone cheese. I was his sous chef!

The cool thing is you can add any ingredient between the cheese you desire. I added tomatoes and spinach to my souped up sandwich. Think apples, pear, ham, slice chicken, the list is endless. Yummo!
